Bellevue Nutrition | Fast and Easy Lentil Soup!

Now that Fall is here it’s the perfect time, as we begin to slow down and go inside, to set the stage to nourish our immune system. If we start now we can likely stave off the colds, flu, and other infections that arrive in the darker days of winter.

Lentil soup is one of my personal fav’s, being fast, inexpensive, chock full of protein, and tasty! The recipe below is one I have tinkered with over many years, and it’s verrry forgiving ~ you can add most anything you like. Please assume all ingredients are organic and non GMO. With some forethought this soup can be done and ready to serve in an hour!

3 - 4 c. of washed lentils; covered with ample water. This can be done the night before, causing the lentils to plump up, which reduces cooking time.

1 quart organic chicken broth (if you’d like added immune boosting properties). OR 1 quart water.

2 – 4 cleaned carrots, 2 stalks celery, 1 large onion, garlic to taste.

Shitake mushrooms (optional): If dry, soak the night before and drain.

½ bunch of kale or spinach, chopped.

Cumin, curry powder, chili peppers

Bring soaked lentils to boil, then reduce heat as you chop the veggies. Add your quart of either water or chicken broth. Chop carrots and celery into small pieces. Dice onion; mince garlic. *Feel free to add as much garlic as you’d like, for MORE immune boosting properties! I often use an entire bulb ☺ Add mushrooms if using.

As lentils and veggies begin to soften, reduce heat to a bit above a simmer. Add spices to taste. I don’t salt as a rule, as chicken broth has a fair amount of natural sodium. Add more water as necessary ~ less if you like a thick soup; more if you like it thin.

5 – 10 minutes before serving add your kale or spinach.

This soup is so tasty it can stand alone, if you are a ‘plant based’ eater. All it needs is a small salad to accompany. For myself I like to grill some pork, roast chicken or add shrimp to my salad. Enjoy!!
