Just for the Halibut | Bellevue Personal Training

There are a handful of foods that make us think ‘Spring’, ~ asparagus, strawberries, sugar snap peas and halibut!!  Low fat, high protein, and just plain delicious, halibut only has two runs a year, so it’s wise to make the most of it and grab it awhile you can.  Perfect with almost anything else you might choose to cook, but especially delicious with asparagus, baby new potatoes, and a crisp white wine. Enjoy!


Lemon Pepper Halibut

1 t. lemon zest
1 t. fresh cracked pepper
1 & 1/2 # halibut fillet, skin off
2 T. tamari or soy sauce.


Preheat oven to 425. Combine lemon zest and pepper.  Place fish on a parchment lined (or well greased) baking dish.  Brush with tamari, sprinkle with lemon pepper.  
Roast 12 – 15 minutes (depending on thickness), or until halibut sections begin to slide apart when pressed.
